Busy Week

Filed Under: About me, French Culinary Institute, Life, Workon November 16th, 2010

Until Thanksgiving (gobble, gobble!) I’m a little busy. But “busy” is a bit of an understatement. Here’s my piece of advice for anyone who wants to learn how to cook, get better at cooking, or find an outlet to relax: buy onions.

Yeah I bet that sounds weird …

I was told by a chef during my first weeks at school that to perfect your knife skills buy onions, sharpen your knife, and go at it. Peel, slice, dice, do whatever you please. Perfect your craft.

TIP: The sharper your knife the less you’ll cry; a sharp knife cuts straight through the onion and less juice is released, no onion eye. OR, you can buy goggles and make the whole experience just that much more hilarious.

I don’t know if I was “perfecting my craft” last night so much as “releasing tension.” So now, on my list of “stress relievers” I consider myself a “sweet tooth, runner, vino, and … onion cutter.”

It can help that after a few, onions can make your eyes water, but maybe you need a good cry? At least it’ll distract you.

Then I indulged in City Bakery’s Bourbon Apple Sauce Cake (which only appears once in a blue moon, RUN and get one before they’re gone) and read O Magazine which features my former boss, and dessert sensation Amy Atlas. (Fun Fact: I was part of the team who put the dessert table together behind her.)

Onions, sweets, what more could you ask for to relieve some stress??

Bachelorette Parties

Filed Under: Food, New York City, Workon April 27th, 2010

I can’t wait to throw a bachelorette party for my sisters … I’m a little fearful of having them throw one for me …

My younger sister literally threatened, (and I wouldn’t put it past her to have) order a stripper for my 21st birthday party. The guest list included my grandparents, family friends, and more adults than the 20-something crowd. Instead she freaked me out (I’m neurotic and nervous) and had a Domino’s Pizza (ew!) man dress up and deliver an extra large pizza at about midnight … with EXTRA SAUSAGE.

Did I just say “order” a stripper? Is that correct?

Regardless, on Saturday night I catered a bachelorette party for a friend that was throwing a party for her sister. We were on a budget, and since the guest list was small, we create a “tapas” style spread that included healthy options such as crudites, fruit, and turkey sliders.

The client was satisfied and I’m sure the rest of their night went fabulously, how can tons of silly toys, feather boas, and drag queen strip clubs not be?!

The above Roasted Red Pepper Crostini Recipe is available here.

Most of my style and inspiration has come from my mother, Miss Kimberly Belle and the Dinner Belle and Amy Atlas, so I must give credit where credit is due for teaching me so much.

So now the cat’s out of the bag, if you ever need a caterer you know who to call …

That's So Martha

I’m young in the scheme of things, very aware. But am I the only one that thinks Martha Stewart Weddings Magazine possibly skipped a few years on the “anniversary” track?? They’re 15 years old!!

And Monday night, in true Martha style they celebrated. At the Plaza. A socialite’s DREAM, rather than a bridal show … which I believe is what is was advertised as. Either way it was grand. BEAUTIFUL, in fact. Toil, shades of pink, champagne bars, ice sculptures, and celebs galore.

But no Martha. “She had a prior speaking engagement.” Not surprising. I’ve heard many wonderful things about Martha, but probably just as many bad. Hands down she’s a god at what she does and anything with her name on it creates a mecca for googling eyed women (and gay men).

In true un-socialite fashion, I was working the event. Amy Atlas Events was asked to create a dessert table and candy bar for the event. All pink shades and very aesthetically pleasing. I’d say it was a success. Amy creates the design for the table and uses vendors to add flavor. Treats included the trendy Baked By Melissa (located on my very own Grand St.) and Whoopie Pies from Wana-Have-a-Cookie.

People are bowled over with all of Amy’s tables, and this was no exception. I’d say it was a success! … even if Martha didn’t show up.

Amy Atlas Fall Table

Filed Under: Workon September 29th, 2009

One of my favorite cooking jobs includes working for the talented event planner, dessert table designer Amy Atlas. For the first day of Fall we (the two other interns and of course, Amy) decided to do a Fall-esque Dessert Table. The entire table can be seen at Amy’s Blog. The almond fondant cake placed on tree trunks (yes, they’re real!), tuiles with apple spiced custard and pistachio cinnamon meringues! Completed Table

The Day Before I Began Pastry School …

Filed Under: Foodon September 28th, 2009

I couldn’t make a box-cake. Yes, I messed up a boxed cake. The only person I’ve ever known to mess up a box-cake was my ex-boyfriend’s mother, who, along with her over-zealous nature for life (God love her), thought that she was a fabulous cook/baker/homemaker/entertainer. She wasn’t, on any account.

As a baker (not a full-time, qualified, or trained pastry chef … yet), I am entirely against the idea of “box” cakes. They’re fake, full of additives, dumbed down of versions of what a REAL cake should be and taste like. Sadly, most people my age associate the home-made taste of “cake” with that box! Ironic, because there’s hardly anything homemade about it … ok, rant over.

But back to my point. A day before a began pastry school at The French Culinary Institute, I failed to make a box cake on a project I was working on for famed and loved dessert table and event planner Amy Atlas. Suffice to say, I left drained of confidence …
