Pastillage, pronounced PAHS-tee-AHJ (I had to, it’s humorous), was the last section of level 2. I’m done with level 2! I feel unhappy to be almost 2/3 through, relieved it’s over, and terrified that I’m moving to level 3 tomorrow.

Pastillage is a type of sugar dough that dries and hardens to form a brittle concrete-like structure. It’s often used to create showpieces, stands, and/or decoration. Although it is edible, I wouldn’t eat it if I were you, I can’t imagine it would be fun (for you OR the chef who created the structure) if you ripped a piece of hard pastillage off and took a bite. Your teeth probably wouldn’t like you either.
Our goal was to create a cake stand that would be able to hold a fully decorated and completed 6-inch cake. I decided to create a stand that mocked a flower. The cake itself being the bloom. I used pastillage, airbrushing, fondant, and buttercream. The cake itself was an orange flavored cake with a lime curd. I didn’t bring it home, but it looked beautiful!
